Cummins and her ex-fiancé Logan Araujo had been planning the $30,000 wedding for two years and were not allowed to cancel their venue or food after calling off the engagement.
Cummins said she decided that rather than throw away the food, she would bring some objective to the event and contacted area homeless shelters.
When asked why her wedding was cancelled, Cummins said, "It's too painful to think about".
Cummins told the paper her ex-fiancé is also devastated, still dealing with his mother's recent death and the cancellation of the wedding.
Cummins stated that they have moved the dinner to an outside pavilion at the hotel -which describes itself as providing "innovative, upscale and superior event services to central Indiana" - and where she had meant to be married.
There, the guests will dine on bourbon-glazed meatballs, goat cheese and garlic bruschetta, chicken breast in Chardonnay cream sauce, and have wedding cake for dessert.
"We're doing all the same stuff, just arranging the tables differently, so there's no head table for the bridal party, no cake table or gift table", Cummins said.
The wedding feast will take place at the Ritz Charles in Carmel, complete with gold Eiffel Tower centerpieces and gourmet food.

Some of Ms Cummins' family joined her at the event, along with three bridesmaids. "I've worked so many weekends and so much overtime to pay for this, I wanted to make sure it would be the flawless wedding", Cummins told the IndyStar.

She greeted the guests as they arrived, with one guest, Charlie Allen, wearing a donated jacket for the occasion.
Mr Araujo, whose mother reportedly died recently, said in an interview that he had agreed to Ms Cummins' proposed solution.
"I will at least have some kind of happy memory to pull from", she said. I'm nervous, but I feel like it will be really good strength building for me.
"I'm happy through my grief and also Sarah's that she was able to make a selfless and very thoughtful decision in such a hard time", said Araujo, who would like for mom Kimberly Araujo, who recently passed away, to be remembered at the dinner.
